So today I did fairly well with my diet. I know I can do this I just need to keep pushing myself. Its hard for me to eat healthy when I am such a foodie, I could seriously cook and eat all day I just love it. Since it was my day off of work today I was able to easily fit working out into my schedule which i was psyched about. I actually planned on working out on my wii fit that I bought but it ended up being fairly good weather and I figured I better take advantage of it while it lasts so I went on an hour long walk. I figured it would be a good way to ease myself back into working out, since I love being outdoors it wouldn't really feel like such a chore, it would just be relaxing, and it was. I love just being by myself to just think about everything in life. But it did make me realize that I am so ready for SUMMER!! even spring would be nice at this point lol. I am so sick of snow and cold. I need to think of some more enjoyable ways to work out though because I do get bored with the same old same old.
Oh and I have another recipe for the day, if you can't tell I definitely have a sweet tooth. If you are looking for a delicious low calorie cupcake this is it.
Take any cake mix and mix it with 2 egg whites and 10 ounces of any diet soda and spoon evenly into a muffin pan. Bake for about 18 minutes on 350 degrees. It makes about twelve cupcakes and they are usually around 160 calories Just look at the nutrition label on the box for the exact calorie count.
Today I made cherry chip cupcakes with diet lemon lime soda and for a real cupcake feel I put low fat cool whip on top for frosting.
They were absolutely delicious. You don't even miss all the fat in these :)
